Eating healthily should be on everyone’s list of New Year’s resolutions. Health coach Samantha “Sam” Binkley makes sure that goal is delicious and decadent, elegant and easy to prepare. Inspired by her Indian-Jamaican mother who cooked healthy curries, vegetables, and stews, Binkley began sharing her own recipes, and gardening and exercise tips with friends. She later launched her Web site to “educate people about healthy eating habits and its impact on overall health and well-being. “ Binkley teaches cooking classes using “great recipes that you can easily replicate in your home in a fun and friendly environment — my kitchen.”  Students raved about her Moroccan Spiced Spatchcock chicken, for example, learning to butterfly and roast a whole chicken in 35 minutes. The dish, seasoned by grinding whole seeds, says Binkley, is “so special that it can be served at a dinner party or a busy weeknight.” Top it off with poached pears in a velvety wine sauce made with cinnamon sticks, whole vanilla beans, star anise, and allspice berries.
