The Pony Room Opening Party

Rancho Valencia Resort & Spa re-opened its doors this past fall following a $30 million transformation. A grand opening celebration took place at The Pony Room, a completely new, polo-inspired bar led by Jayson Knack, director of restaurants and a court of masters sommelier. Highlights of The Pony Room’s offerings include Prosecco on draft, high-end wines on tap, a wide selection of spirits including more than 100 tequilas and hand-crafted, one-of-a-kind cocktail creations. Executive chef Eric Bauer presented signature menu items including a variety of flatbreads, shared bites, cheeses and charcuterie, and rustic dishes.
