Already a standout in the oenology department, Rancho Valencia’s red and white stock has risen to blue chip status behind sommelier Mitch Price. Thanks to his extensive knowledge, the resort and spa now boasts 660 selections from a cellar that’s
8,000 bottles deep. This includes 17 premium wines by the glass served from a state-of-the-art wine dispensing system that protects each vintage’s integrity.
Of the recent additions, Price cites numerous favorites, including the 1996 Schloss Schönborn Hochheimer Domdechaney Spätlese Reisling — its key lime pie nose and toasty green apple nuances make it a perfect go-with for RV’s coconut-infused vegetable green curry. Meanwhile, the up-front citrus from British Columbia’s 2012 Foxtrot Chardonnay syncs with a lemon beurre blanc adorning Hawaiian Mero sea bass. And the 2010 Happy Canyon Piocho out of Santa Barbara is the perfect red to pair with a Brandt Farms rib cap thanks to pronounced notes of dark currant, licorice, and tobacco.
