For $85 per person, the six-course menu begins with Oyster and Caviar Toast, featuring warm milk bread topped with smoked oyster cream, Kaluga caviar, and fresh chives. The second course showcases Bluefin Toro and Strawberry Crudo, lightly drizzled with a soy-balsamic reduction. Next is a comforting slow-cooked Japanese Onion and Wagyu Bone Broth, followed by a Premium Sashimi and Nigiri Flight including otoro, kanpachi, Hokkaido scallop, snapper, hamachi, and salmon belly.
