At the recent Taste & Art Stroll in Del Mar, attendees enjoyed vendors and an art exhibition, as well as irresistible tastes by a number of leading restaurants, wineries, and breweries. Guests cast their vote for the “Tastiest Taste” at the Ranch & Coast booth, and we are thrilled to announce that the winning dish as selected by attendees was Jake’s Del Mar’s Seafood Cocktail — a flavor sensation featuring poached shrimp and lobster layered with avocado and micro greens on a bed of English cucumbers, finished with a sweet orange Thai chili sauce. Jake’s Del Mar’s Seafood Cocktail

 

Ingredients:

1, 8 oz. can of orange juice concentrate

1 cup sugar

16 cups sweet Thai chili sauce

8 oz. corn starch slurry

2.5 lbs. slipper lobster pieces

60, 16/20 shrimp

2 oz. sweet orange Thai chili sauce

black sesame seeds

daikon sprouts

lobster broth

1 cucumber

1 avocado, diced

micro greens

 

For the sweet orange Thai chili sauce:

Mix together the orange juice concentrate, sugar, sweet Thai chili sauce, and corn starch slurry. Set aside.

 

Preparation:

Poach lobster in lobster broth, poach shrimp, chill both and cut into a medium dice. Mix in sweet orange Thai chili sauce and portion. Place 6 slices of cucumber in a circle in the center of the plate. Place round mold on top and fill with shrimp and lobster mix. Spoon diced avocado into the round mold on top of the lobster shrimp mix and then top with micro greens. Drizzle sweet orange Thai chili ssauce around the outside and garnish with black sesame seeds and daikon sprouts.
