This month, Pacifica Del Mar introduces three new features — a new executive chef, a raw bar, and an extensive vodka list that will serve more than 75 of the world’s finest vodkas. Longtime executive chef Chris Idso is now partner/chef, having passed the spatula to Thomas “Tommy” DiMella. With a culinary career spanning more than 20 years including positions at Pamplemousse Grille and Dussini, DiMella is passionate about sustainability and looks forward to putting his spin on the menu.
