Apples are a good source of antioxidants, fall low on the glycemic index, and are a good source of soluble fiber. I recommend buying in-season organic apples from your local farmers’ market. Store them in the refrigerator to prevent over-ripening and to preserve their flavor. For a quick and healthy pick-me-up, combine four organic apples (cored and sliced) with one tablespoon of agave nectar and one teaspoon of cinnamon. Toss gently and divide into four serving bowls. Top with your favorite low-fat granola, and if you cheat with a dollop of whipped cream, your secret is safe with me. MARIA DESIDERATA MONTANA
