At Sea Rocket Bistro in North Park, “sustainable” isn’t just a buzz term. From diver-harvested sea urchins that comprise the menu’s signature bisque to locally-sourced grass-fed lamb and beef, it’s a regionally-inspired way of life. “By living in a way that is much more in touch with nature, we can make a big difference on what the world is like in the future,” says co-owner Dennis Stein, whose green efforts don’t stop at the menu.
