Former New Yorker and fourth-generation restaurateur Randy Gruber, a graduate of the French Culinary Institute, worked at Biba in Boston prior to moving to California in the late ’90s. After working at Pamplemousse Grille as a manager, he created Americana, which offers delectable cuisine within an idyllic corner of downtown Del Mar. From savory egg dishes, homemade Belgian waffles, and the Smoke House Bacon Cheddar Burger by day to the Seafood Paella and Pesto Grilled Halibut by candlelight, Gruber’s classic comfort food with a modern interpretation is inspired by regional and seasonal ingredients.
Americana is currently celebrating its tenth anniversary, and Gruber notes, “I love what do every day, I am living my dream. My daily life is centered around living and working in Del Mar. It took many years and a lot of effort to be able to have this great opportunity to be an owner/chef of my own restaurant, and I am very grateful.”
