Executive pastry chef Franck Riffaud and pastry engineers at Park Hyatt Aviara Resort will soon unveil a ten-foot-tall Gingerbread Mountain Village, one of the must-see attractions in Carlsbad during the holidays. Using more than 22 pounds of gingerbread dough, 300 pounds of sugar icing, and 18 pounds of chocolate, the edible village is home to 675 residents including Santa and Mrs. Claus. Other notable residents include Frosty’s Ski-Daddle Ski School, Blitzen’s Ale and Spirits, Rudy’s Candy Store owned and operated by Rudolph, and The Toy Depot where post-production toys from Santa’s workshop can be purchased off-season.
